๐ฅ Golgappa / Pani Puri (Street Style)
๐ฅ Ingredients for Chutney
- ๐ฟ Fresh Coriander Leaves โ 2 cup.
- ๐ฟ Fresh Mint Leaves - 1 cup.
- ๐ถ๏ธ Green Chilly.
- ๐ฏ Tamarind Pulp โ 1โ2 tbsp.
- 1 piece Ginger.
๐ฅ Ingredients for Aloo Stuffing
- ๐ฅ Boiled Potatoes โ 3 to 4 (mashed)
- ๐ค Boiled Black Chana / Black Peas โ ยฝ cup
- ๐ง
Finely Chopped Onion โ 1 small
- ๐ฟ Fresh Coriander Leaves โ 2 tbsp (chopped)
- ๐ถ๏ธ Chutney โ 2 tsp (Mint, Coriander, Ginger, Tamarind, Green Chilly)
- ๐ฐ Roasted Powder Masala ( Cumin + Saunf + Red Chilly ) โ 1 tsp
- ๐ง Salt โ to taste
- โซ Black Salt โ to taste
- ๐ฅ Chaat Masala / Amchur Powder โ 1 tsp
๐ฟ Ingredients for Golgappa Pani (Mint Water)
- ๐ถ๏ธ Chutney โ 5 tsp (Mint, Coriander, Ginger, Tamarind, Green Chilly)
- ๐ฐ Roasted Powder Masala ( Cumin + Saunf + Red Chilly ) โ 1 tsp
- ๐ฟ Fresh Coriander Leaves โ 1 cup (For Garnish)

Finely Chopped Onion โ 1 small
- ๐ง Salt โ to taste
- โซ Black Salt โ to taste
- ๐ Lemon Juice โ 1โ2 tbsp
- ๐ง Cold Water โ as required
- ๐ง Ice Cubes โ optional
๐ฉโ๐ณ Method โ Chutney (for Aloo Stuffing + Pani)
- Make Chutney -
๐ฟ In a blender, add mint leaves, coriander leaves,
green chillies, Ginger , Tamarind Pulp and a little water.
- ๐ Blend into a smooth green paste.
- ๐ฅฃ Transfer the Chutney to a large bowl.
๐ฉโ๐ณ Method โ Aloo Stuffing
- ๐ฅ Add boiled potatoes to a mixing bowl.
- ๐ค Add boiled black chana / vatana and lightly mash.

Add chopped onion, coriander, chutney
- ๐ง Add salt, black salt, roasted masala powder, and chaat masala.
- โจ Taste and adjust spice & salt if needed.

Aloo stuffing is ready. Keep aside.
๐ฉโ๐ณ Method โ Pani (Mint Water)
- ๐ฅฃ Take 1 cup chutney in a pot.
- ๐ง Add salt, black salt, roasted masala powder, and chaat masala.
- ๐ Add lemon juice. Garnish with few slices of Lemons

Add chopped onion, coriander
- ๐ง Add cold water and mix well.
- โ๏ธ Add ice cubes or refrigerate for 30 minutes.

Refreshing golgappa pani is ready.
๐ฅ How to Assemble Golgappa
- ๐ฅ Take a crispy golgappa and gently make a hole on top.
- ๐ฅ Stuff 1โ2 spoons of aloo mixture inside.
- ๐ฟ Dip the filled golgappa into mint pani.
- ๐ Eat immediately in one bite!
