  • ๐ŸŒฟ Fresh Coriander Leaves โ€“ 2 cup.
  • ๐ŸŒฟ Fresh Mint Leaves - 1 cup.
  • ๐ŸŒถ๏ธ Green Chilly.
  • ๐Ÿฏ Tamarind Pulp โ€“ 1โ€“2 tbsp.
  • 1 piece Ginger.

๐Ÿฅ” Ingredients for Aloo Stuffing

  • ๐Ÿฅ” Boiled Potatoes โ€“ 3 to 4 (mashed)
  • ๐ŸŸค Boiled Black Chana / Black Peas โ€“ ยฝ cup
  • ๐Ÿง… Finely Chopped Onion โ€“ 1 small
  • ๐ŸŒฟ Fresh Coriander Leaves โ€“ 2 tbsp (chopped)
  • ๐ŸŒถ๏ธ Chutney โ€“ 2 tsp (Mint, Coriander, Ginger, Tamarind, Green Chilly)
  • ๐ŸŒฐ Roasted Powder Masala ( Cumin + Saunf + Red Chilly ) โ€“ 1 tsp
  • ๐Ÿง‚ Salt โ€“ to taste
  • โšซ Black Salt โ€“ to taste
  • ๐Ÿฅ„ Chaat Masala / Amchur Powder โ€“ 1 tsp

๐ŸŒฟ Ingredients for Golgappa Pani (Mint Water)

  • ๐ŸŒถ๏ธ Chutney โ€“ 5 tsp (Mint, Coriander, Ginger, Tamarind, Green Chilly)
  • ๐ŸŒฐ Roasted Powder Masala ( Cumin + Saunf + Red Chilly ) โ€“ 1 tsp
  • ๐ŸŒฟ Fresh Coriander Leaves โ€“ 1 cup (For Garnish)
  • ๐Ÿง… Finely Chopped Onion โ€“ 1 small
  • ๐Ÿง‚ Salt โ€“ to taste
  • โšซ Black Salt โ€“ to taste
  • ๐Ÿ‹ Lemon Juice โ€“ 1โ€“2 tbsp
  • ๐Ÿ’ง Cold Water โ€“ as required
  • ๐ŸงŠ Ice Cubes โ€“ optional

๐Ÿ‘ฉโ€๐Ÿณ Method โ€“ Chutney (for Aloo Stuffing + Pani)

  1. Make Chutney - ๐ŸŒฟ In a blender, add mint leaves, coriander leaves, green chillies, Ginger , Tamarind Pulp and a little water.
  2. ๐ŸŒ€ Blend into a smooth green paste.
  3. ๐Ÿฅฃ Transfer the Chutney to a large bowl.

๐Ÿ‘ฉโ€๐Ÿณ Method โ€“ Aloo Stuffing

  1. ๐Ÿฅ” Add boiled potatoes to a mixing bowl.
  2. ๐ŸŸค Add boiled black chana / vatana and lightly mash.
  3. ๐Ÿง… Add chopped onion, coriander, chutney
  4. ๐Ÿง‚ Add salt, black salt, roasted masala powder, and chaat masala.
  5. โœจ Taste and adjust spice & salt if needed.
  6. โœ… Aloo stuffing is ready. Keep aside.

๐Ÿ‘ฉโ€๐Ÿณ Method โ€“ Pani (Mint Water)

  1. ๐Ÿฅฃ Take 1 cup chutney in a pot.
  2. ๐Ÿง‚ Add salt, black salt, roasted masala powder, and chaat masala.
  3. ๐Ÿ‹ Add lemon juice. Garnish with few slices of Lemons
  4. ๐Ÿง… Add chopped onion, coriander
  5. ๐Ÿ’ง Add cold water and mix well.
  6. โ„๏ธ Add ice cubes or refrigerate for 30 minutes.
  7. โœ… Refreshing golgappa pani is ready.

๐Ÿฅ™ How to Assemble Golgappa

  1. ๐Ÿฅ™ Take a crispy golgappa and gently make a hole on top.
  2. ๐Ÿฅ” Stuff 1โ€“2 spoons of aloo mixture inside.
  3. ๐ŸŒฟ Dip the filled golgappa into mint pani.
  4. ๐Ÿ˜‹ Eat immediately in one bite!
